Chocolatey Cakey Banana Bread

I love bananas… I mean like, really really love bananas! I would even venture to say they are my all-around favorite fruit. Not only do they taste delicious, but they’re packed with nutrients, they come in a convenient little peel-away package, and you can eat them on the go with one hand, which is very useful when you’re busy caring for an infant. Seriously, what’s not to love?!

Yesterday, I looked in my fruit bowl only to find 3 sad little bananas that had started to get brown and mushy – I had to rescue them before they withered away! When I was a kid, I would just toss them out and wait for Mom to go buy some more. As I got older and wised up, I started using those browned bananas in things like milkshakes and pancakes. But since banana milkshakes just remind me of my pregnancy now (my first trimester consisted of only banana milkshakes and sesame seed bagels), I wanted to try something new. Something I’d been craving for quite a while now – Banana Bread!

I found a very easy recipe and adapted it for my needs, so here you go!

What you need:

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 tsp cocoa powder
  • 3 small mashed bananas
  • 2 eggs
  • 3/4 cup oil
  • 1/2 cup milk
  • 1 1/4 tsp vanilla

What to do:

  1. In a large bowl, mix flour, baking soda, baking powder, white and brown sugars, and cocoa. Whisk well.

  2. In a smaller bowl, add the rest of the ingredients and mix very well.

  3. Add wet ingredients to dry ingredients and stir until it’s all incorporated. It will look like brownie batter.

  4. Pour batter into a greased 9 X 13 pan and put in a 350 degree oven for about 30 mins, or until a knife inserted in the center comes out clean.

  5. While you’re waiting, clean out the bowl with your fingers… it’s so yummy! :)

Ok, so it comes out more like a banana cake, than a bread. But it’s such a good base cake though and you can try adding goodies into the batter, like nuts, dried cranberries, or even coconut flakes! This is definitely a new favorite in our house :)
