5 Minute Mango Ice Cream! {Tiny Tip Tuesday}
18I’m generally pretty much a simpleton when it comes to ice cream flavors. Yes, an indulgence in mint chocolate chip, or rocky road, or cookies n’ cream is always welcome; but my regular fallback is always the classic french vanilla.
That being said, one exotic flavor that I’ll always order if it’s on the menu at our favorite Asian restaurants is mango ice cream – so rich and creamy, and just bursting with the perfect blend of sweet and sour that only a mango can produce.
I don’t own an ice cream maker, and the only homemade ice cream I’ve made is the vanilla one in a plastic bag. Well, that and the quick frozen banana version, which is sooo good mixed with some peanut butter or cocoa powder!
This mango ice cream (original recipe from This Chick Cooks) is very similar to the banana version. In fact, all you need is just 3 ingredients: a banana, a mango, and some milk.
You’ll peel and cut up the banana and the mango into small bite size pieces. Put them on a baking sheet and flash freeze them until they’re frozen. Then put them in the blender or food processer, add a splash of milk (a few tablespoons or so), and blend until thick and creamy. If it’s too dry or won’t blend properly, just add another splash of milk to achieve the right consistency.
I usually keep a large stash of chopped frozen fruit in the freezer to use in our green smoothies, so I used about a cup of mango and a little less than a cup of banana. I only took two pictures while making this (sorry!): one after it was all blended and created a pretty ribbon in the blender:
And of course, the final product, garnished with some mango pieces. This ice cream really lives up to its name: so creamy, and so perfectly sweet and tangy! I’m definitely making this again.
