I’ve written about my love for coconuts and coconut oil quite extensively in the past, but what I’ve never done is really get into the technical reasons of just why coconut oil is so amazing. I use it for everything from a skin moisturizer and hair conditioner, to a cooking/baking oil and body scrub! I’m telling you, I love all things coconut, especially coconut oil.

I only use two oils in my kitchen: extra virgin olive oil for cold use (such as salads), and coconut oil for high heat cooking. Coconut oil is the only oil stable enough to withstand the heat of cooking and is therefore the healthiest oil available for this purpose. Since heating olive oil makes it susceptible to oxidative damage, it’s not a healthy oil to use for cooking.

Tropical Traditions Coconut Oil

My favorite source for coconut oil is definitely Tropical Traditions. I use their expeller-pressed coconut oil for high-heat cooking (scrambled eggs are delicious cooked in some coconut oil!), and their virgin coconut oil for all other applications including for hair, skin, smoothies, and baked goods that could use a bit of coconut flavor.
