On Sunday morning, as I’m making up a batch of pancakes, I realize the unimaginable – We were fresh out of syrup!
Did I panic? Nope! Well, kind of, but not really. Partly because I’m not really a panicky person, but mostly because I knew exactly how I was going to remedy the situation: yummy strawberry syrup! Well, it’s more like a strawberry sauce, but you get the idea.
It’s very quick and easy, and you can whip it up in no time. Add it to your pancakes or waffles, or drizzle it on some homemade ice cream, or use it to make strawberry shortcakes!
You can use either fresh or frozen berries; I recently froze a whole bunch of strawberries so that’s what I used. Cut them into halves or quarters, and add them to a pot, along with the sugar (or sweetener of choice).
Cook them over medium-low heat until the sugar melts, then turn up the heat to medium and bring to a boil.
Once it boils, remove from heat and lightly mash the strawberries to help them release their juices. I used a potato masher, but you could just use a fork or a wooden spoon.
Return to heat and bring back to a boil, then dissolve the cornstarch into some water and add to the pot. Stir the sauce and continue boiling for another couple minutes until it thickens.
